What are the benefits of fun and laughter?

What are the benefits of fun and laughter?

   Like yourself a lot, love who and how you are;

A    Accept you can do anything you put your mind to;

U    Understand life is not a dress rehearsal, live it, embrace it, and have fun;

G    Give away smiles and compliments (they bounce back);

H    Hug someone everyday.

When you laugh, you have fun, it has a positive effect on your body and mind, and fun helps to reduce stress and anxiety.  When we are having fun, it is easy to forget about everyday problems.  This helps you to relax and feel good about yourself.

Weekly Healthy Recipe: Chicken casserole with porcini mushrooms

Ingredients:

1 chicken (skinned), cut into 8 pieces

Flour for dusting

3 tbsp virgin olive oil

Salt & Pepper

8 baby onions or shallots

1 clove garlic, sliced

200g mushrooms, stemmed and cut into large pieces

10-15g dried porcini mushrooms, soaked in 1 cup of water

11/2 cups white white

2 bay leaves

Method:

  1. Lightly flour the chicken pieces.  Heat a pan with 2 tbsp of olive oil and brown the pieces of chicken well all over (you may want to do this in two batches) season with salt and pepper.
  2. In a casserole pot large enough to fit all the chicken, heat the rest of the oil and cook the onions until golden brown, adding the garlic towards the end.  Add the mushrooms and cook for a few minutes, then add chicken, soaked porcini and their liquid, the wine and bay leaves.  Season.  Cover with a lid and cook for 11/2 hours.
  3. If the sauce is too thin at the end, pour into a pot and reduce a little.  Serve with crusty bread, wet polenta or boiled rice.
